“Being this particular is hard work. Even so, I don’t want to bend my own philosophy," says Chef Murata. Ookini,
which has fans across Japan, is devoted to sushi kappo cuisine built around fresh wild-caught fish and
pesticide-free vegetables from Kyoto. No chemical seasonings or preservatives are used.
For sake, the house
specialty is an original junmai-shu aged in a barrel, “Ookini no Taruzake," served in wooden cups made by a
Living National Treasure.

Review by Kyo Sushi Ookini

  • The ikura roll topped with black soybean natto was the finest natto sushi I have ever had.
  • I ordered the akadashi to warm up. It had bamboo shoots and white fish in it, and the quality of the
    ingredients was a surprise.
  • The shrimp was firm and thoroughly satisfying; its natural quality really came through.
