Over a 25-year career in Japanese cuisine and sushi, the chef has kept visiting the markets at Tsukiji and
Toyosu,
and that experience is what lets him judge the season and the provenance of each fish. Ingredients gathered
through trusted relationships with fish brokers are aged and cured differently according to their moisture
content, fat, and the potential of each fish.

For the shari, two varieties are selected: Sakihokore, specially cultivated rice from Ogata Village in Akita
Prefecture, and Yumepirika, Hokkaido’s top-grade brand rice. Each is cooked in a hagama pot and finished as two
distinct kinds of shari, one based on red vinegar and one on rice vinegar, used according to the ingredient and
the order within the course.
The restaurant’s name comes from the koruri, a small bird whose beautiful blue
inspired the lapis tone that runs through the tableware and sake vessels. Shari and topping, sushi and sake, the
restaurant and its guests: this is a sushi-ya that aims for harmony in every one of those pairings.

Inside there are just eleven seats along an L-shaped counter. You can watch the chef work right in front of you
and settle in to a calm space dressed in lapis-toned tableware and sake vessels. The restaurant is entirely
non-smoking, and an English menu is available.
Three minutes from Yotsuya Station and yet a step away from
the
bustle of the city, it suits everything from dining alone to a date, and from client entertaining to an
anniversary meal. Private bookings can be arranged for up to twelve guests. Every Saturday from 17:00 to 19:00
there is also a family day, when guests can enjoy Edomae sushi together with small children.

  • I enjoyed all 22 courses, from the first small dish through to dessert. There is careful work in every
    single plate, and it makes a fine impression.
  • The sushi speaks for itself, but the sake pairing is remarkable value; I got to try a whole range in
    small pours.
