The owner’s cuisine has even received a one-star rating in the “Michelin Guide Fukuoka/Saga 2014 Special Edition". Customers from all over Japan come to Tatsusho for his sushi.
Since becoming a chef, he has been thinking about “how to serve the best sushi" and has arrived at the simple-is-best concept.
He has come to the conclusion that “simple is best," meaning that he does not add anything extra to his sushi, but rather lets the natural flavors of the ingredients shine through.
To achieve this, he carefully selects the origin and condition of the ingredients and prepares them with care.
The “neta" fish is the most important element of sushi, but wasabi (Japanese horseradish) is also an essential ingredient.
Tatsusho uses wasabi from Izu, which is nurtured by the minerals of deep forests and cool, clear streams, and has an elegant pungent flavor.
