The sushi served at the restaurant focuses on local ingredients from the former town of Minamikayabe, where the
owner is from, as well as from local fishermen.
The owner says, “I want to be a sushi restaurant that is unique to this town," and 80% of his sushi is traditional
sushi, but he also adds a few extra touches that are unique to this restaurant, such as kohada that is lightly
kombu-banded after being washed in vinegar, which is typical of a place famous for its kombu.

The restaurant’s 10-meter-long counter made of a single piece of Aomori hiba (cypress) creates a dignified
atmosphere, while on a clear day, a view of the Shimokita Peninsula in the distance creates a refreshing ambiance.
A total of four private rooms with tatami mats and chair-table seating are available for two people or more.
Depending on the weather, the window-side private room (one room) may offer a view of the Tsugaru Straits from the
window.

- Hakodate’s sushi restaurants know their seafood inside and out, so they serve not only sushi, but also
very tasty seafood appetizers!- I have traveled to Hakodate more than 10 times and I think this is my favorite restaurant. It is worth
going just to eat here, isn’t it?- The rice was a gentle flavor mixed with 30% red vinegar, and since it was served in small pieces, I was
