“Having sourced ingredients from the market every morning for 56 years, we have strong ties with the market, allowing us to offer high-quality items at low prices,” Mr. Shinbata says with confidence.
In addition to directly sourcing fresh seafood, he’s particular about the rice vinegar used for the sushi rice. He uses rice vinegar from a long-standing vinegar supplier and rice specially blended by a farmer. This commitment to quality has earned him many regulars and repeat customers.
Particularly popular are the Omakase Sashimi Platter,’ featuring seasonal fish, and the Boiled Conger Eel Nigiri,’ made with a whole eel.
