The charm of Kuratake lies in the skills of its chefs.
The owner, who has studied at famous restaurants, prepares a variety of sushi with his own unique twist while inheriting the tradition of Edomae.
He procures seasonal ingredients, mainly local ones, and uses delicate touches to accentuate their charm.
The sake selection is mainly local sake from Ishikawa Prefecture, with rare and limited sake also available.
The restaurant has only 10 seats at the counter, and the simple interior design with no waste shows the spirit of the artisans who strive for pure deliciousness.

Nigiri sweet shrimp marinated in soy sauce for a rich, concentrated flavor.
The delicate craftsmanship of the squid nigiri brings out its texture and sweetness.
