Red-Vinegar Sushi and the Scent of Straw Rising Before You — Sushi to Warayaki Isaribi

Sushi to Warayaki Isaribi sits on the fourth floor of the KSM Building, a one-minute walk from Sannomiya Station
in Kobe. It is a popular restaurant where authentic sushi made with Edomae red-vinegar shari and warayaki — fish
seared over flaming straw right in front of the counter — can both be enjoyed at reasonable prices.
Here we
introduce the allure of Sushi to Warayaki Isaribi.

As the name suggests, this restaurant rests on two pillars: sushi and warayaki. The nigiri is made with Edomae
red-vinegar shari, and the toppings — Akashi octopus, aged wild sea bream, fish shipped directly from its port of
origin — are each prepared to suit their own character. The warayaki the restaurant is known for is seared on the
spot in front of the counter, so the pleasure includes the very moment the fragrance of burning straw rises.

The kitchen is in the hands of chef Kazuya Sakaguchi, born in Tokushima Prefecture in 1989. He trained for four
years at a ryotei in Kyoto, two years at a creative Japanese restaurant in Kobe and four years at a kappo
restaurant in Kobe before joining Sushi to Warayaki Isaribi in 2021. He loved eating from an early age and became
a chef out of a wish to cook good food himself. His hope is that guests will drop in easily, on all sorts of
occasions, to enjoy fresh, high-quality fish alongside shochu and sake.

Review by Sushi to Warayaki Isaribi

  • Everything was fresh and delicious. I sat at the counter, and it was a treat to have the straw searing
done right in front of me.
  • The interior has a calm atmosphere where you can take your time over a meal. The warayaki had a real
fragrance to it and went very well with a drink.
  • The menu has a wide range and everything on it made me want to order. The room is bright and the tables
are roomy, so we could eat at a relaxed pace.
