Toshikatsu Aoki, the second-generation chef, spent a year in the United States after graduating from university,
then trained at the renowned Yoshino in Kyobashi. He went on to refine his craft in Ginza under his father,
Tadashi Aoki, who had himself trained at the legendary Nakata, before taking over the restaurant as its second
generation.
The foundation is the traditional Edomae sushi inherited from his predecessor and from the houses where he
trained, yet the character of this restaurant has been shaped by many other threads: the shifting atmosphere of
Ginza, flavors remembered from his travels, and conversations with discerning guests. Above all comes the
question of how to make guests smile at something delicious, and with that in mind, sushi in the Ginza Sushi

Inside there are only eight counter seats, all within easy reach of Chef Aoki’s attention. The space is calm and
free of excessive decoration, and because there is room between the seats, you can give the sushi your quiet
attention. The restaurant is entirely non-smoking, and guests are asked to avoid strong perfume.
From Exit A2
of Ginza Station, walk straight with Kyukyodo on your right and follow the jewelry shop as your landmark to the
fourth floor of the building. It suits a wide range of occasions, from dates and dinners with company to family
meals and client entertaining. At the irregularly held “Ri" course, cooked on a charcoal grill made to order by
a
kiln, seasonal treasures of sea and mountain such as bamboo shoots, sweetfish, matsutake and crab are prepared
right in front of you.
