Ryuzushi’s strength lies in the procurement channels it established when it was a town sushi restaurant. Sea urchin is purchased from Rishiri in Hokkaido, Yura in Awajishima, Hyogo, and Toboro from Aomori depending on the season.
We build our courses with these high-quality seasonal fish and the natural bounty of Minami-uonuma.
Ryuzushi also uses wild vegetables as the star of the show! Maitake mushrooms cover the fatty tuna in nigiri, and fresh kikurage mushrooms are placed on the negitoro roll.
At Ryuzushi, local mushrooms and wild vegetables also make excellent nigiri.

The first floor has a chic atmosphere with U-shaped counter seating and clay walls hung with single-flower vases.

- A famous restaurant in the mountains, yet ranked high on the Niigata sushi list! The restaurant was closed for a while due to Corona, but they have reopened with a renewed interior. It is not cheap, so I would like to go there on our anniversary.
